Kid-Friendly Mother's Day Recipes
If you want to give Mum a truly special gift this Mother's Day, helping out in the kitchen is certain to be appreciated. These kid-friendly Mother's Day recipes are easy for young chefs to prepare, as long as older siblings or Dad helps out with the cooking.
Breakfast: Pancakes in Bed
It's said that breakfast is the most important meal of the day, and that goes double when Mum gets to enjoy a lie-in. Fluffy pancakes are one of the easiest meals to whip up, all you need is:
1 cup flour
2 tablespoons sugar
2 tbsp vegetable oil
2 teaspoons baking powder
1 tsp salt
1 cup milk
1 egg
Mix the flour, sugar, baking powder and salt together in the centre of a large bowl. Add the milk, egg and vegetable oil and stir the mixture until smooth.
Get a grown-up to heat the pancake mixture over medium-high heat until both sides are brown, and serve hot with Mum's favourite toppings.
Brunch: Carrot Muffins
Treat Mum to some low-calorie muffins for a guilt-free brunch. To make 18 tasty muffins, you'll need:
2 eggs
2 cups shredded carrot
2 cups flour
1/2 cup sugar
1/2 cup raisins
1/2 cup low-fat yogurt
1/4 cup canola oil
1/4 cup low-fat milk
2 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla extract
ground nutmeg
salt
Stir the flour, sugar, baking soda, salt and spices together in a large bowl. Combine the eggs, milk, yoghurt, oil and vanilla extract in a second bowl and whisk until smooth, then gently stir the contents of both bowls together and add the carrots and raisins.
Spoon the batter into muffin cups and get an adult to bake the muffins in a preheated oven for 20 to 25 minutes at 175°C. If your Mum isn't fond of carrots, substitute other vegetables like zucchini and corn.
Lunch: Pasta Salad
Kids can add the ingredients to this quick and easy lunch favourite, which uses:
1 packet dry pasta
1 bottle Italian dressing
1 cup cheese cubes
1/2 jar black olives
1/2 packet pepperoni
Parmesan cheese
When an adult has cooked and drained the pasta, kids can add the pepperoni, olives and cheese, or your choice of ingredients. Pour the Italian dressing liberally and chill for at least two hours for a flavourful finish.
High Tea: Scones
Serve a classy afternoon tea complete with creamy scones when you follow this easy recipe:
1 egg
350g self-raising flour
150g natural yogurt
85g butter
4 tbsp whole milk
4 tbsp golden caster sugar
1 tbsp milk
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
Combine the flour, butter, baking powder, sugar and salt in a food processor until the mixture is smooth, then transfer to the centre of a large bowl, while an adult gently heats a mixture of yoghurt, milk and vanilla extract in the microwave or on the hob. Once this mixture is warm, stir it into the flour mix to make the dough.
Transfer the dough onto a floured surface and flatten to around 4cm thick, then use a floured cutter to stamp out as many scone tops as you can, squashing and re-flattening any leftover dough each time.
Brush the scone tops with egg and get an adult to bake them in a preheated oven at 220°C for 20 minutes until golden. Serve with cream, jam and your Mum's favourite hot beverage.
